About our coffee

Philippine coffee, finally on the map.

The Philippines was once the world's fourth-largest coffee producer. Today most of our country's beans are sold as commodity — we're working to change that, one Monday roast at a time. Every Tala coffee is traceable to the farm: Arabica from Sagada, Benguet, Ifugao and Kalinga in the Cordillera; Mt. Apo, Kitanglad and Matutum in Mindanao; and the legendary Liberica — kapeng barako — from Batangas and Cavite.

We roast in small 6kg batches on Mondays and ship within 48 hours, so your coffee arrives at its peak, between 3 and 10 days off roast. Choose whole bean for the freshest cup, or pick your brew method and we'll grind it to order at no extra cost.

How fresh is the coffee when it arrives?

Every bag is roasted on Monday and shipped Tuesday. Metro Manila orders arrive within 1–2 days, provincial orders in 2–4 days — always well inside the 3–30 day window when coffee tastes best. The roast date is printed on every bag.

Whole bean or ground?

Whole bean stays fresh longest. No grinder? Choose your brew method at checkout and we'll grind it the morning it ships — it'll still taste great for about two weeks.

What's the difference between Arabica, Liberica and Robusta?

Arabica (our Cordillera and Mindanao coffees) is sweet, aromatic and complex. Liberica — barako — is a rare species with huge beans and a bold, smoky, jackfruit-like cup. Fine Robusta is strong and chocolatey, perfect for espresso with milk.

How should I store my beans?

Keep the bag sealed, out of sunlight, at room temperature. Skip the fridge — humidity is coffee's enemy. Our bags have a one-way valve so they can breathe without letting air in.
